Students kept a log of activities, suprizes, reactions, feelings, new experiences, insights into organic and sustainable food and communities.  For many this was the first time to Europe and for some the first time on a farm.  The final assignment for the course was to write a synthesis/reflection on their experiences. What they learned, what was surprizing, how they felt about what we saw and the people we met.  Their papers are insightful and entertaining.
