Value-Added Properties

American consumers are becoming increasingly particular about the food they eat. As a result, farmers fight an uphill battle in their competition for market share. Value-added properties — achieved by manipulating the genetics of a plant, managing the environment in which a plant grows, and optimizing the plant’s post-harvest handling — enhance the healthfulness and pleasure of eating, and award more desirable products, higher prices, and greater market share to those who produce food.
